Yesterday morning, I was in the mood for some super high antioxidant power foods, wanted to fuel up on great energy for the day ahead! I had a nice bunch of kale greens and blueberries, and thought “hmmm…” both meet the criteria, but never had them together?!
Balsamic vinegar has health benefits galore {helps with blood pressure, cholesterol, blood glucose levels}, not to mention is full of F-L-A-V-O-R, and seemed like it would be a good way to balance the bitterness of the kale with the sweetness of the blueberry ~ so, why not give this trio a whirl in the pan?
I just tossed the kale in for a few minutes on high, spritzed on some balsamic with a sprinkle of sea salt, and topped it off with some blueberry deliciousness:
