I heard from many of you who are enjoying my accidental ice cream recipe so in the spirit of just whipping it together and trying, I wanted to share some creative whip ups that have actually worked well! Yes, some of my “whip ups” at first round are not so good, but you know the old saying, “if at first you don’t succeed, try try again” ~ but try it differently or else you’ve achieved Einstein’s definition of insanity 😉
Anyhow, my accidental ice cream began with an idea to use Greek yogurt which fell on the floor. But, I do use Greek yogurt for lots of stuff because it is super healthy – we all know it has good bacteria, and it’s loaded with vitamins and minerals like potassium, B5, zinc, phosphorus, riboflavin, B12! Greek yogurt contains more than double the amount of protein than regular yogurt, and can help prevent high blood pressure. Now, I’m not a numbers person, but I know some of you are so check this out – yogurt also has been shown to help whittle your waist – according to a study out of the University of Tennessee, people who ate 18 ounces a day released 22% more weight and 81% more belly fat than those people who did not include yogurt in their daily intake – the calcium helps cut the production of the nasty hormone cortisol {which wreaks havoc on our bodies}, so weight release or not, I am in favor of foods that help us say good riddance to cortisol!
Greek yogurt is also very versatile! I do the standard Greek yogurt flair – you know mix in some pure coconut extract and berries, add some cinnamon and pure vanilla, even cream it up a bit with some almond butter…you get the drift – I like to make simple, healthy, delicious flavored yogurts. But, I also use Greek yogurt for so many savory things, too, like:
1) Yo-Salsa Anyone? I love salsa, but it can be a little spicy for me. I add a tablespoon or two of Greek yogurt to green salsa or chipotle salsa, and use it as a topper for my scrambled eggs, yams, hummus burgers, or even as a dip for fresh cut veggies, homemade corn tortilla chips…and sometimes I even just eat it by the spoon {it’s THAT good!!}.
2) GuacaYole – You read it right, instead of guacamole make some GuacaYole! For a small single serving bowl of it, use half an avocado, 1/3 cup of Greek Yogurt, chop up some onion, cilantro, add a little salt, cayenne, cumin, squeeze in lime juice and mash it all together!! Chop a few tomato bits on top and it is GuacaYole deliciousness!!
3) Creamy Quiche Sans Cream and Crust – I keep it simple and in a small bowl, I whip up a mixture of 2 eggs and 2 additional egg whites, 1 cup of Greek Yogurt, sea salt, and pepper. Cook up whatever veggies I’m in the mood for {or that are ready to use in my house or from our garden}. With the oven ready to go at 350, I pour everything into a pie baking dish, and let it bake for about 40 minutes or so. You can be creative and add just a small bit of cheese – super creamy ones like Brie or Gruyere or Goat cheese would go right into the mixture, or dryer cheese can be a great topper if you like a “crusty” outside, just grate up some Parmesan, Romano, or its sweeter friend Asiago.
