Last week my mother made kale at Sunday dinner. It was so yummy, so I picked some up to have in the house. I decided to mix it up a bit, by baking it with cranberries and walnuts.

Words can’t even describe how delicious it was- I could have eaten bowl after bowl of it, but stopped myself after the 2nd pan. Baking the kale gives it a crunch that feels almost like a potato chip, but without the greasy aftertaste. It also transforms the flavor slightly, so the combination of the kale and cranberries was just sweet enough but still honoring the slight bitter flavor you expect when eating kale. My mouth is watering and I may even pre-heat the oven for another round 🙂

What You’ll Need

Kale

1/2 cup Cranberries

1/4 cup Walnuts (chopped)

1 tablespoon Olive Oil

Sea Salt

Let’s Do It

Pre-heat the oven to 400 degrees. Slightly spray a cookie sheet and place kale all over. Sprinkle in the cranberries and chopped walnuts, then drizzle on the olive oil and dash of sea salt. Bake at 400 degrees for 10 minutes.

And repeat.

The amounts listed above will make 2 cookie sheets worth of Baked Kale and Cranberries.
