Today I am in the mood for eggs. But, instead of another omelet or scramble, I am going to get a little fancy and bake ’em into a light, delicious Frittata. I love this Frittata because it is super simple, tastes great, and is very healthy. And, its pie-like consistency is just perfect for Sunday Brunch.
What You’ll Need
1 egg
3 egg whites
1 tablespoon fresh grated Parmesan cheese
1 tomato
1 cup chopped veggies (onions, mixed peppers, zucchini – mix it up and sub with your favorites)
1 medium clove chopped garlic
2 tablespoons skim milk to keep it light (or low sodium chicken stock for a little flavor)
sea salt and fresh ground pepper to taste
Let’s Do It
Preheat the oven to 350. In a small nonstick pan, coat the bottom, add garlic, and do a quick saute of the veggies. In another bowl combine eggs, egg whites, skim milk or chicken stock, and salt & pepper. Whisk it good. When the veggies are done, add the egg mixture into the pan and combine together. It should start to get a little firm. Sprinkle your grated cheese over the top and then pop it into the over until the Frittata has a firm pie-like texture. Depending on the oven, this should take about 15-20 minutes.
When it’s done, garnish with a slice of tomato and you’ve made a super simple yet gourmet Sunday Brunch.

Egg Yolk: While you have to limit the amount of yolks you eat because of the cholesterol and fat, you definitely should not ban it altogether. The yolk contains most of the nutrients and vitamins, so in moderation, they are a healthy addition to your day. The yolk has B-vitamins (B-6, B-12, thiamin, folate) which help promote metabolism and release energy, Vitamin A which is good for the skin, Vitamin D which is good for the bones, and minerals such as Choline, Zinc, and Iron which is essential for the creation of red blood cells.
Egg Whites: Egg whites are fat free with very few carbohydrates, but are jam packed with essential vitamins and protein for strength and muscle development. They are super low in calories, with only about 20 per egg white, so by mixing 1 yolk with 3 whites, you are drastically lowering the calories and fat content of the Frittata.
Get Creative
Yes, there is a lot you can do with a Frittata. Have fun with the ingredients by throwing in what you have on hand- leftover chicken, ground turkey meat, carrots, cheese- whatever you wish. And, serving Frittata can be fun, too. Check out some of these creative ways to dish it out…
